My Easy, Quick, No-Carb Veggie Stack…It’s that Good

So today’s post is about finding time to eat healthy always, no excuses whatsoever. Sometimes I think that people feel that when you have to eat healthy you really need time for it, although I can understand completely I also think that it takes time to cook a meal even if it’s not considered “healthy”.

We as a whole have to get into the mentality that our body is truly a Temple, it needs clean, healthy and most of all homemade foods to feel energized, peaceful, strong and to look it’s best. Lately I, although seem to have a ton of time feel like I am constantly pressed for time, and although it’s delicious and easy to come home and throw some salad, and other veggies in a bowl and mix it up and voilà dinner is served; I also feel like I would like to serve something a little different but that also looks as though I put time and effort in it. Ha! That must be the little cook in me….always trying to achieve perfection.

I’ve mentioned previously how much I love to grill, it’s low fat and quick. So, I decided that I would make grilled Veggies and kinda give them a sort of lasagna layering. You can grill whatever veggies you like it’s really up to what you have in the fridge and what you enjoy most that can be put on a grill….Mushrooms, Tomatoes, Onions, Radicchio, Endive, Potatoes, Asparagus. But remember if you’re in a rush don’t stress out use what you have, it’s going to be delicious. Trust me.

Ingredients:

2-3 Zucchini

1 large Eggplant

4 tbsp. Extra Virgin Olive Oil

1 tbsp. Vinegar (any flavor you prefer)

1/2 Garlic Clove, minced

6 Parsley stems, chopped

1 Chili chopped, optional

Salt and Pepper to taste

Turn on your grill at medium setting and let heat. In the meantime slice your eggplant and zucchini 1/2 inch thick longwise. Once grill is warm put your veggies on top allowing to cook for about 5-8 minutes.
Chop Parsley, Garlic and Chilli and mix in a small bowl with Olive oil, vinegar, salt and pepper. Put aside.

You may flip over your veggies now and allow to cook another 5 minutes allowing to reach grill marks.
Remove from heat. Get your plates and drizzle a little of your Olive oil mixture on the bottom and layer some eggplant drizzle again and layer some zucchini, drizzle again and  layer eggplant, continue this until you’ve atleast achieved 4 layers and top off with a drizzle. Do the same with other dish and serve.

Now you’ve cooked up a delicious, healthy, quick meal and you still managed everything else. You can do all sorts of variations, sprinkle pine nuts on top, feta grape tomatoes…you choose. This is what I had and it was perfect. Enjoy.

Healthy Chicken My-Way with Sundried Tomatoes and Mushrooms

I know I have mentioned before how much my Husband and I love chicken. It’s the perfect ingredient for anything healthy….it can be difficult at times to have ideas for skinless chicken breasts especially when you want to keep it healthy, but still tasty.

I love to grill it and then accompany it with any vegetable I have in the house i.e. zucchini, eggplant, green beans, spinach, broccoli or of course fresh vegetables salad.
But then the fall comes along and you start feeling like you want to eat something warm and a little more; how can I put it heartfilling. So anyways, most fall/winter recipes include heavier ingredients and aren’t as healthy as one would like. I find it though easy because I just like to throw whatever vegetable I find in my fridge that I could also use in a salad raw, and cook it. In this case I had sliced mushrooms (I love to add those raw to a green vegetable salad), and some sundried tomatoes in olive oil. Perfect I knew exactly what I could do so here the recipe follows.
Enjoy this heart-warming meal you can accompany it with other vegetables, roasted potatoes, or with brown rice, quinoa, cous-cous, and whole grain pasta. You pick that.

Ingredients:

2 medium sliced skinless Chicken Breasts

1 handful Mushrooms, Sliced

10 Sundried Tomatoes, drained

1 clove, Garlic minced

Handful Parsley, chopped

3 tbsp. Extra Virgin Olive oil

1/5 cup Water

Salt and Pepper to taste

In a large saucepan heat the olive oil, and add your garlic, add your mushrooms and allow to cook for about 4 minutes, in the meantime chop your sundried tomatoes and then add to your mushrooms, add the water and allow to simmer for 3 minutes.

Add chicken breasts to the pan with the ingredients, cover and allow to 10 minutes, turning the chicken over once. Add parsley, salt and pepper cook for about another 3 minutes and then serve.

Light summer Salad with Grilled Corn and Mushrooms

Salad, Salad, Salad. It seems to be something that I always crave. Whenever I go a day or so without a salad that is all I start to crave; not at all a bad thing might I add!
My husband and I love to have a nice big salad for dinner at least once or twice a week and we try to come up with different ways of making it, we always add something different, the possibilities are endless as to what you can add to a salad and also to the way you prep it.

I especially love to grill some of the ingredients and when it’s hot out and you just feel like using the grill it’s perfect. Grilled vegetables are amazing and add so much flavor to what might seem like a boring meal. In this recipe we had found some nice big mushrooms and corn and so we decided to add that to the salad, it married so well together I had to post the recipe so that you all could try it at home. I hope that you enjoy it as much as we did. You can serve it on the side or as a main dish (which is what we did..) Enjoy!

Ingredients:

1 bag mixed salad (I like Italian)

1 handful of arugula

1 handful of Baby Spinach

2 ears of corn, cleaned

4 big sized mushrooms, or 2 Portobello’s

6 grape Tomatoes, sliced in half

1 can quartered Artichokes, drained

4 tbsp. Extra Virgin Olive oil

2 tbsp. Apple Cider Vinegar

1/2 Lemon, squeezed

Salt and pepper, as needed

Preheat your grill. Wrap your corn in aluminium foil and place on the grill for about 20-30 minutes, turning over after 10 minutes.

In the mean time clean you mushroom caps and sprinkle salt and pepper and 1 Tbsp. of Extra Virgin olive oil, set on the grill and allow to cook until golden brown, flipping once; about 10-15 minutes.

Place your salad, arugula, baby spinach, tomatoes and artichokes in a large salad bowl. By now your corn and mushrooms should be ready so turn your grill off and set aside. With a knife remove the corn from the cob or husk and add to your salad. Add the remaining olive oil, the vinegar, lemon, salt and pepper mix together well and serve. Once plated place the mushroom caps on top of the salad and eat. Yum!

Sesame Crusted Grilled Tuna Steak

There is something just so delicious to me about Tuna Steak! My husband and I both love seafood and seem to never be able to get enough of it.
For starters there is so many different types of fish and/or seafood; from tuna steak to sea bass, tilapia to salmon, lobster to shrimp, clams to scallops and the list can go on forever, it’s simple, fresh and delicious. It’s healthy and easy to digest, perfect for a light meal anytime of the year.

We both have fallen in love with tuna on the grill, we basically make in about 10 minutes and that’s including marinating, grilling and serving…HA!
My husband is amazing with the grill, you might think that’s not that hard but it is; you need to know how and when to flip the food, what temperature and most of all how to keep it tender without leaving it raw or burnt. However, he is great at it and seeing as though I like most of my meals grilled, I am truly appreciative that he does the grilling as it gives me a break from doing all the work myself.

Tuna is figure friendly; with very little fat and just 80 calories per 6 ounce steak.
Tuna is an excellent source of protein. It’s full of omega-3’s and contains Vitamin E and K which help prevent heart disease, cancer and blood coagulation. It has essential minerals such as potassium, niacin, selenium, iron and iodine.
You can see why there are so many health benefits associated with tuna. So; consume tuna regularly as part of a healthy diet and reap all of these health benefits.

We like to grill it, but there are many, many ways of prepping it. In this recipe I use only 4 ingredients; be creative and see what you can create or how you want to marinate it. I accompanied it with a light leafy, green salad. Avocado is excellent as well, and I also like asparagus or green beans; so see what you have or like and use it! Enjoy.

Ingredients:

2 6 oz. Fresh Tuna steaks

2 tbsp. of Habanero hot sauce (Crystal is great)

2 tbsp. of Sesame seeds

Grinded Peppercorns

drizzle of Extra Virgin Olive Oil

Preheat you grill. Get your tuna steaks and evenly spread 1 tbsp of hot sauce on one side of the steaks, grind peppercorns and sprinkle add 1 tbsp of sesame seeds on top; flip steaks over and repeat procedure using the remaining ingredients.
Drizzle the Olive oil and put steaks on the grill cook for about 4 minutes on each side; the steaks should be a little pink in the center*.
Remove from heat and serve. That’s it!

* If you like it cooked thoroughly then leave it on longer.

 

 

My Cleansing Vegetable Soup

So, as you all know I just finished a 10 day cleanse. I like to come off of it and introduce a nice vegetable soup with only seasonal, organic and fresh ingredients. I strongly believe that whenever you come off of any cleanse or detox you should slowly introduce food, now this soup is perfect for that, but it’s also perfect for when you are feeling sluggish or when you are detoxing but don’t want to do anything drastic have a day of this soup and you will feel fantastic the next day!

My husband loves to eat this soup whenever I make it. Although he’s not a big fan of the cleanse, he loves detoxing with this delicious vegetable soup. It’s packed with nutrients and it’s so beneficial to the body and digestive tract. You can really put anything that you find in season this time around I added pretty much only green vegetables because that is what I found in season. use what you find and like and make sure to add very little salt, you don’t want to retain too much water and besides too much salt isn’t good anyways. I hope that you enjoy it and that you give yourself an opportunity to occasionally eat only veggies……It’s GREAT and really beneficial!
You will notice that when you do introduce meat you feel way more sluggish and different, I am not a vegetarian by any means I love my Prosciutto Di Parma (or San Daniele), grilled chicken and fish. But I feel fantastic taking a break. And so will you!

Ingredients:

1 Onion, finely chopped

1 Carrot, chopped

Handful Parsley, finely chopped

2 cubes Vegetable bullion, No MSG or Preservatives

5 Zucchini, chopped

1 bunch Asparagus, chopped

1 handful Green Beans, chopped

2 handful Baby Spinach

Salt and cayenne, to taste

 

Boil first 4 ingredients in a pot for about 30 minutes. Add the rest of the ingredients and cook to desired doness.  Add the salt and cayenne, if you want. Serve.

 

Light Summer – Bavette alle Vongole (Linguine with Clams)

So, alright you all know how much I love to eat healthy and still enjoy life. This is the perfect dish for just that! You get anything better than this, I love this meal it’s one of my favorite dishes; I honestly could eat it every week. It’s light, gourmet and perfect for summer!

So, my Brother came over for a few days and I knew that he was really good at making this dish so we went to the fish market on the canal here in Cervia, Italy (where I live); we bought some live clams and decided that this was our dinner dish. It was a lovely spring day the sun was out but there was still a little breeze and so it was perfect weather for this dish. We accompanied it with a nice glass of Pinot Grigio and an evening walk after the delicious dinner. This is a dish I would suggest anyone to try if you haven’t yet, you’ll love it.

Here I explain how to clean the clams. http://mythineats.com/2012/03/04/low-fat-has-never-tasted-so-delicious-vongole-con-vino-bianco-clams/ In this recipe we actually removed the shells before making the sauce so that you don’t have to get your hands dirty while enjoying this dish but you can skip this step if you wish, I’ll explain in the recipe.

Ingredients:

500 gr. of Linguine

500 gr. of Clams (cleaned)

2 Garlic Cloves

Handful Parsley, fresh leaves (chopped finely)

4 tbsp. Extra Virgin Olive Oil

1 cup Clam water (How to in recipe)

Chili flakes, optional

Put your cleaned Clams in a small pot, fill with water and boil until the clams all open up; approx 10 minutes. Remove from heat and leave in pot. (Do not drain you will use this water in recipe)

Place a pot a water to boil for your Linguine and pour in about 2 tbsp. of salt.

Now get your clams and remove the meat from the clam shell with either a pairing knife or even a small teaspoon and place in a bowl, throw out the shells and save the juice.

Pour your olive oil in a medium saucepan, mince your garlic and add to oil allow to get golden, add the Clam meat and allow to cook for about 3 minutes, start adding your clam juice gradually. Add your parsley and chili flakes and continue to cook for about 5-8 minutes until sauce starts to thicken.

In the meantime your water should be boiling so throw in your linguine and follow cooking instructions on box. Drain and add your clams mix all ingredients together well and you can begin to serve. Buon Apettito

 

 

 

My Go-To Healthy Dinner – Grilled Chicken and Asparagus

One of my favorite all time healthy, Low fat and Low Calorie Meals is the classic chicken and vegetables. I personally love asparagus so whenever in season they are always on my dish. The other thing that I love is to use the grill as much as possible it keeps the meal low fat but with amazing flavor.

My Husband is the one that grills he loves it and I love the fact of cooking together. It’s like our little time together and it makes us enjoy each other more. Most of the time it’s me cooking and him just waiting around pouring the wine, trying his best to stay out of the way; but when we do cook together it’s both of us doing the work and we both compliment each other in the part that the other one cooked. It’s nice and I particularly appreciate his help and enjoy the fun moments that come from it.

My husbands favorite meat is Chicken, he could honestly eat chicken about everyday or every other day so as soon as grilling season comes along (or even way before), we are definitely grilling chicken breasts. Accompanied generally by a vegetable and quinoa or cous-cous. The other night we had the delicious grilled chicken breasts with asparagus and it was so good I thought that I should share the simple recipe with you. Enjoy!

Ingredients:

2 Chicken breasts, sliced thin

1 lb Asparagus

2 tbsp. Extra Virgin Olive oil

1 sprig Rosemary, fresh (removed form stem)

Salt and Pepper to taste

Turn on your grill and let heat. Get your chicken and drizzle 1 tbsp. of olive oil on it, along with the rosemary, salt and pepper. Mix together and let sit.

Get your asparagus and wash, put it in a large saucepan over medium heat and drizzle remaining 1 tbsp. olive oil cover and allow to steam stirring occasionally; add salt and pepper to taste after about 5 minutes and cover. Should take about 15 minutes to be completely cooked.

Put your chicken on the grill and cook each side for about 10 minutes. In the meantime check on the asparagus if you can pinch with a fork it means that they are ready,* remove from heat. By now your chicken is ready so plate. Enjoy

*I like my Asparagus with just a little snap to them, not soggy but you cook to your desired doneness

 

                                                

 

 

Meatless Monday Gourmet- Feta and Asparagus

This gourmet meatless Monday recipe, (which we actually ate on Thursday) was a total and wonderful concoction. I often think of things that I like to eat and imagine them paired up with other ingredients that I like to eat; I think to myself how it is possible that you can only have 1 of the ingredients that you love on a dish paired up with a not so favorite ingredient?! And so I think of what I loved of the dish I just ate and how I would make it at home or how I would’ve liked to eat it or what ingredients I would pair it up with to make that perfect plate.

Feta is one of those cheeses that I think that only paired up with the right ingredients you can actually enjoy. I have had it on several occasions and have to admit that I haven’t always enjoyed, sometimes it tastes fantastic and other times I wish it wouldn’t of been on the plate. My husband and I were thinking that we hadn’t had feta in a very longtime and that we should buy some, I instantly thought of pairing it up with green tomatoes and asparagus; given that he doesn’t like green tomatoes I figured that I would make his with grape tomatoes instead and so this is how this recipe came about, it was simple and delicious and after we finished my husband said that this would have to be made atleast once a week. I hope that you enjoy it. I include both pictures one with the green tomatoes and one with the grape tomatoes I just layered them differently, the one with the green tomatoes I put the green tomatoes at the bottom and the one with the grape tomatoes I put the grape tomatoes on top. Here are the ingredients.

Ingredients:

2 Green Tomatoes (or 5 Grape Tomatoes)

1/2 a pound of Asparagus, steamed

1/5 pound of Feta, thinly sliced

Handful of Parsley, chopped

2 tbsp. Extra Virgin Olive Oil

Sal and pepper to taste

Slice your green tomatoes thinly and lay at the bottom of the plate, layer your asparagus evenly, drizzle on tbsp. of olive oil and sprinkle salt and pepper. Layer the sliced feta and sprinkle chopped parsley finish with remaining olive oil and sprinkle salt and pepper if needed and serve. Enjoy.

Finally Here it is: Ragù Bolognese

A lot of you have been asking me to post the recipe on how to make the real Ragù Bolognese, I had posted about Italian lunch with my family (in the link below) and you all wanted the recipe so here it is…Finally!

I love a good Tagliatelle al Ragù and I have to admit, my Husband goes crazy for it anytime my Mom asks him what he would like to eat or for her to make him 8 times out of 10 it’s “Tagliatelle al Ragù”. To me it’s a perfect winter dish, or for those days that it’s cold and rainy outside and you want to make something really delicious and special. Keep in mind that everyone here in Italy has their version of making it some make it with 3 different types of meats, some make it with red wine, some white wine, some use fresh tomatoes, some swear by the naturally canned ones, some do this and some do that…well, no matter what it is always delicious. This is my recipe. Enjoy.

Also one more thing to keep in mind the way the foods are stored here and the way the meats are here is way different than in the USA, when I was there for some reason it never quite turned out the way that it was supposed to turn out (although still delicious) there was always that something missing. Anyhow, I’m sure that it will turn out fantastic and that you will enjoy it.
I recommend using this sauce on top of tagliatelle, for you lasagna and stuffed cannelloni.

 

Serves 4

Ingredients:

300 gr. Ground Beef

150 gr. Pancetta

50 gr. Carrot

50 gr. Celery

50 gr. Onion

5 tbsp. of Tomato sauce or (20 gr. Tomato paste)

1 cup of homemade Beef Stock

1/2 cup White Wine

200 gr. Milk

Salt and Pepper to taste

Clean the vegetables and cut finely
Cut the bacon into cubes of about 20 cm in diameter and let it melt at the bottom of you sauce pan.

When the bacon has that melted see through look, add the vegetables and season with salt and pepper. Let them cook and soften for about 10 minutes to allow them to absorb the full flavor.

Combine the ground beef to the vegetables and let it brown over medium-high heat, for about 7-8 minutes. When the meat starts to “brown and sizzle” pure in the wine and let it evaporate completely.

Next, add the tomato with the broth; mix well cover the saucepan and allow simmer at very low heat, for about 2 to 3 hours.  During cooking, add the milk little by little.

Almost at the end of cooking, adjust salt and pepper, remove the lid and allow to thicken a bit more.

And there you have it. Buon Appetito!

 

Low Fat Cooking – Simple Steps to Follow

Cooking and eating is the topic of most of my days, but the thing that I like to share with you today is how to manage cooking in a healthier manner that doesn’t require you to give up on flavor and still help you stay healthy and fit. I know that the word low-fat is not so attractive to some of you; and then again to some of you it might be just what you are looking for. I love that you can actually cook and eat low-fat and all you are giving up is the extra fat that your body doesn’t need. Now, I think that your body does need fats, but there is a difference between good fats and unnecessary fats. Let’s discuss this.

For instance, I think that grilled fish and chicken is more tastier than it cooked in a pan with oil, you give up on the fat because when you grill it the fat drains, hence making it less fat and the taste is delicious.
I also love lactose-free non fat or low-fat milk vs. the whole regular milk, the flavor is pretty much the same and all I am giving up on is fat.
Also I like to make my own buttermilk at home, by using the low-fat milk and lemon, it works exactly the same way but way less fat.

This is what I mean by giving up on fat but not on flavor. Things are yummy cooked the right way, we don’t have to get scared of fat, but we can learn to select it.
For example, I love almonds and walnuts, they are high in fat but all extremely good for you, so I eat them.
I love avocados, also fat. I love to use olive oil, also fat and I do like some good old Parmigiano Reggiano and will never eat any fake low-fat version, the real one is good for you and there is no substitute in my book.

So to follow are some tips on how to cook low-fat. Enjoy!

1) Grill, broil, bake, braise, steam, poach, slow-cook, and microwave foods instead of frying them. Sautéing is ok with minimal amounts of oil (preferably extra virgin olive oil or coconut oil), or use nonstick spray.

2) Choose chicken or turkey sausages or burgers instead of pork or beef sausages or burgers.

3) Choose extra-lean meat and skinless chicken breasts, and remember to trim all visible fat from meats.

4) Substitute most meat dishes each week with fish or vegetarian meals.

5) Use one egg and two egg whites per person in your favorite egg dishes or cakes; or cut fat and cholesterol completely by using egg substitute. Or also substitute 2 egg whites for one whole egg or 3 egg whites for 2 eggs.

6) Substitute whole milk for non fat or low-fat milk.

7) Oven-fry, bake or boil potatoes instead of making or buying French fries.

8) Choose reduced fat sour cream or yogurt instead of full-fat versions for stews, dips, spreads, and dressings.

9) Replace some of the fat in baked goods with applesauce, plain nonfat yogurt or low-fat buttermilk. (to make your own buttermilk: 1 cup low-fat milk mixed with 1 tbsp. lemon juice fresh).

10) Use reduced fat or fat-free cream cheese instead of the regular version for cheesecakes.

11) Use evaporated skim milk in place of light or heavy cream in soups and sauces.

12) Use fat-free chicken broth or fat-free milk in mashed potatoes, soups, gravies and stews

13) As a healthy alternative to frying, coat meat or veggies in egg whites then use bread crumbs and bake in the oven.

14) Cook fish in parchment paper or foil to seal in the flavor and juices.

15) Instead of eating potato chips, substitute pretzels, pita chips, or raw fruits and vegetables.

16) Rinse canned foods such as tuna, beans, and vegetables before using to wash away excess sodium or oil.

17) Thickening the sauce with cornstarch instead of a traditional butter-flour mixture.

18) Season vegetables with herbs and spices rather than sauces, butter or margarine.

19) Cook with lemon juice or herbs — these add flavors to food such as vegetables without adding fat.

20) Use mustard as a sandwich spread in place of margarine or mayonnaise. Or use healthy fats such as nut butters on your toast.
