Stay Thin & get all your Omega-3, Iron & More with this Amazing Dish

I’ve missed you guys these past weeks. I had a wonderful time visiting friends and family in the USA and really enjoyed this much need vacation.
As you all know the USA is trying to start a health revolution (well it has been for awhile) but it’s taking sometime to get people on board with it. Even though it has come long ways it still seems that habits are hard to break. And although they are trying to get people to eat more organic and healthy foods they seem to constantly come up with new healthy products that are supposed to replace the unhealthy products, I like to call them ‘healthy junk food’. That’s what it is. Instead of stopping to produce say potato chips, they come up with a healthier potato chip, made with flax seeds, chia seeds, rice flour, bean flour, natural flavorings, etc…it’s still a freaking chip; albeit healthier still a chip. Why not reach for a handful of almonds, or some fresh fruit, or veggies, some yogurt, an egg or even a piece of parmigiano reggiano cheese?! These are healthy, whole and organic replacements to junk foods. I am not saying that those better for you chips aren’t better for you but why do they have to have a whole aisle and a half in a grocery store full of chips. It’s too much!

I am lucky that I have learned early on in life what eating healthy is all about and that here in Italy it’s so easy to do that. Healthy tastes so good! I am one of those people who will always opt to eat something healthy over something that has no nutritional value but may sound good.
For Me, healthy does sound good. I know people often times relate this word ‘healthy’, to boring, tasteless, unworthy, complicated and uninviting. Total opposite for me. I relate it to delicious, flavorful, easy, worth it, inviting with a wonderful array of options and colors.

I love knowing that what I am putting into my body is helping me stay healthy and I’m not putting crap in my body that is actually going to cost me my health, weak bone density, tooth decay, dull and unhealthy hair, wrinkles and ugly skin, GI problems, illnesses, etc….
Eating healthy is a habit but a good one to form. I have wrote about Healthy Eating habits and the wonderful effects it as on your body from weight-loss to feeling fantastic and how to do it here and here.

This next recipe is super simple and so good for you and trust me you will not be disappointed with the flavor it has. To top it all off it packed of healthy Nutrients, Vitamins and it’s Delicious. Enjoy!

Ingredients:Serves 2

2 6-oz Salmon fillets

1/2 lb of Spinach

1 cup of Lentils

1 1/2 cup of Veggie broth, low sodium

1 Shallot, chopped finely

1-2 dried Chili peppers, whole (optional)

Extra virgin Olive oil

Salt and Pepper to taste

In a small pot add 1 drizzle of olive oil, allow to heat and then add 1/2 the chopped shallot. Once shallot has reached cooking time, needs to be translucent you may throw in your lentils, salt and pepper then add your chili’s and broth. Cover and allow to cook at medium low heat for about 15-20 minutes.

In a separate pan add some olive oil place over medium heat and add the shallot, following cooking instructions same as for lentils. Now add your spinach, followed by salt and pepper; lower heat and cover. Cooking time may vary, it needs to wilt so when you see that it has wilted continue to cook for about 5 minutes and then turn off.

For the Salmon you are going to salt and pepper both sides. Place a pan over high heat add a small drizzle of olive oil, allow to heat completely and then carefully add your salmon. Cook for about 5 minutes and then flip over cooking for another 5 minutes.

Everything at this point should be cooked. So you may serve.

Gourmet Valentines? Try this: Pollo alla Cacciatora – Chicken Cacciatora

You may know by now that I am a savory kinda girl. So instead of posting a dessert I decided that I would post one of the most mouthwatering, amazingly delicious dish I have ever had the pleasure of eating for my Valentines Day recipe. I love this dish and it requires no time so you can still get all dolled up and ready for dinner while the house is filling with this amazing aroma of Pollo alla Cacciatora.

This is a perfect deep luscious red, sophisticated, amazingly gourmet but yet simple, healthy, effortless and delicious dish. This is a perfect dish if you have/want to impress anyone or if you want to finally feel proud that you can actually put something this delicious, succulent and amazing on a dish!
I bought the famous Artusi cookbook not too long ago “La scienza in Cucina e l’arte di mangiar bene”, “The science of cooking and the Art of eating well”. He’s known for the best Italian recipes bringing us back to the way it was prepared once upon a time. He’s cookbook was published back in 1891 and perfected in 1911 with a total of 790 recipes (for more click on above Artusi link). So, this is a recipe I got from there, only difference is that I used a shallot instead of an onion.

It only requires 4 ingredients (besides salt and pepper of course) and really is just delicious. I for some reason wasn’t able to get any good pictures because the smell that filled the house made both my husband and I incredibly impatient and extremely ravenous. But make this and I promise that you will not be disappointed.

I think that it would be a perfect dish to serve for Valentines Day if you are planning on cooking something for your love. It won’t leave you feeling heavy…wink, wink; and will leave you and whomever you served it to feeling that it was much better to stay home and eat this than go out and eat something crappy, not delicious set-menu because it is Valentines Day. No way! This will knock your socks off.

I got some fresh baked bread so that we could do ‘scarpetta’ which is used in reference to cleaning up the sauce on your plate with bread. Accompanied by a nice green salad dressed in olive oil.
However, you could accompany this dish with polenta, rice, potatoes, or whatever you like.

Ingredients:

2 Shallots, chopped finely*

1 small Chicken, chopped in pieces

½ cup of Red wine, pick SanGiovese or at least something good (this is the secret to this dish)

½ cup Tomato Sauce

Salt and Pepper to taste

Put a medium to large skillet on medium-high flame with about 4 tablespoons of Olive oil, once the oil is hot add your shallots and allow to get translucent. Now scoop out the shallot and transfer to a plate, set aside.

Get your chicken, and place skin down onto the skillet, salt and pepper and once skin is golden flip and salt and pepper as well, cook for another 5-8 minutes and then add your shallot back in the skillet, followed by the wine and the tomato sauce. Mix around a bit, cover and allow to cook for about 40 minutes flipping the chicken once.

Now remove the lid and cook for about another 10 -15 minutes. Your chicken should be cooked, tender and juicy and your sauce thickened. Serve.

*If you don’t have shallots you can use one onion

Day After Superbowl Cleansing Soup

We are all human and bound to get carried away at times. During festivities and/or especially after watching a Superbowl game with friends having one too many drinks and eating a little too much can leave your body feeling just a bit tired and heavy.
It’s nice to be able to get your body back on track especially because it’s Monday and we need a lot of energy for this week ahead. Catering to your body and giving it a nice nutritious, light, warm meal can do wonders.

Help jumpstart your body into getting rid of toxins that you’ve accumulated during this time by feeding it a light meal allows your body to focus more on your body than on the digestion of what you are eating, hence using the extra energy in keeping you awake, or completing that workout that you are so dreading because you feel exhausted. We don’t realize how much energy our body uses for digestion and when you eat heavily it really takes a toll on your already tired body.
This is a nice light recipe that will really give your body all the nutrients it is now lacking.

It’s so good for you and simple; but most of all delicious. I topped it off with some steamed mushrooms and chilies (recipe below). Feel free to top off with what you like. I hope that you enjoy!

Ingredients: For the Soup

1 lb. of Spinach*, washed

1 Scallion, finely chopped

5 cups of Vegetable broth**

Handful Parsley, chopped

2 tbsp. of Ginger, fresh & grated

A pinch of Cayenne *optional

Salt and pepper to taste

In a medium pot add half a cup of broth, add your scallion and allow to get translucent. Add your ginger, then spinach, parsley then cayenne, salt and pepper mix and add remaining broth allow to cook for 15-20 min.
Turn heat off and with an immersion blender puree the soup. Serve warm.

*Spinach use whatever variety or array you like
**Make your own by boiling 5 cups of water and add a no MSG Veg bullion

Ingredients:  For Mushroom topping

2 cups of Porcini Mushrooms*, chopped

2 Chili Peppers *optional

Couple leaves of chopped parsley

1 tbsp. Extra Virgin Olive oil

Salt and pepper to taste

In a sauce pan add the olive oil with the chili pepper and the parsley, allow to simmer lightly and then add your mushrooms. Saute for about 5 minutes add your salt and pepper. Cook for another 5 minutes and then top your delicious soup with this. YUM!

*Whatever mushroom is completely fine.

Gnudi – Spinach and Ricotta Delicate No-Carb Balls

Have you ever just had a craving for something? I love all things cheesy and although I might not eat cheese everyday when I do I like it to be good quality cheese with a quality meal. Sometimes it’s just cheese and wine; here in Italy it’s so common to eat Parmigiano Reggiano in chunks with a nice glass of wine or for a snack.
However delicious; one of my favorite types of cheese is a good Pecorino aged at least 100 days but anyway I find it I like it. I find it so delicious and also easier to digest, maybe because it’s from sheep’s milk instead of cow. Whatever the reason I really enjoy it.

I was thinking the other night as I prepped my menu for the week as to what I would like to make for dinner and as seeing that it’s been cold, rainy, snowy the last week or so I thought of something warm, indulgent and possibly not too heavy because in the winter most dishes seem to be a little bit more heavy and a little too indulgent.
This recipe popped in my head and I thought ‘brilliant’, this it is: Gnudi which means ‘Nude’, they are in the family of Gnocchi but in a much lighter and delicate way because they have no-Carbs whatsoever they are not heavy or chewy, they melt in your mouth and feel like a little piece of heaven when you eat them.
Now, even though these don’t have a lot of ingredients and seem light they are still filling so I think that 4 or 5 balls per person is plenty. You can serve them with a light red sauce, mushroom sauce, bacon or whatever you like I choose a light sage and olive oil concoction, accompanied by a nice green salad. They are very simple and fast to make and make a great impression. Delizioso! I hope that you like as much as we did. Enjoy!

Ingredients: Makes about 15 large balls

1 kg. of frozen Spinach,  thawed, squeezed dry & chopped (get rid if the excess water)

300 gr. of Sheep Ricotta*

150 gr. of Pecorino, grated**

1 egg

Salt and Pepper to taste

For the sauce:

4 tbsp. Extra Virgin Olive oil

5 leaves of Sage, fresh chopped or whole

Handful of Pecorino, grated

Preheat your oven at 350° (180°) degrees.

In a large bowl mix together spinach, ricotta, pecorino, the egg, salt and pepper.
Grab a baking dish and start making the balls placing down one by one, don’t worry if the are close to each other they won’t stick.

Now in a small sauce pan heat your olive oil and sage together until starts to sizzle and switch off. Drizzle the Olive oil mixture evenly over the balls, sprinkle the pecorino on top and bake for 20 minutes. Serve.

*Ricotta can also be from cow’s milk.

**You can use Parmigiano instead of Pecorino, I just wanted to use all sheep’s cheese.

Homemade Cesar Salad with Polenta Croutons and grilled Chicken

It was something that we were both craving: a nice cesar salad with a twist, I wanted to make it a little healthier with still the delicious flavor. It’s such a heavy salad and with all the heavy ingredients I feel like you could just eat a plate of pasta instead. So, yes I tweaked it and it was delicious. I decided that polenta was going to replace the white flour bread croutons that famously go with this salad, and the dressing was going to be lighter and healthier. Yum!

Here in Italy we obviously don’t have Cesar salad contrary to the popular opinion of people thinking that this salad is Italian. It’s actually originally from Mexico, Tijuana named after the Chef Cesar Cardini an Italian immigrant who invented it in 1924. The original recipe doesn’t contain anchovies. However there are many variations of this salad with some recipes including different ingredients such as mustard, egg, avocado, tomato, bacon bits, garlic cloves or anchovies. I do like this salad and so I added an ingredient of my own. Enjoy!

Ingredients:

3/4 cup of Polenta Croutons (recipe below)

2 Chicken breasts, grilled and chopped

1 head Romaine lettuce, chopped*

1/3 cup 0% Greek yogurt

2 tbsp Olive oil

2 tbsp Parmigiano Reggiano, grated

1 clove Garlic, minced

Juice form 1/2 a lemon

2 Anchovies, chopped

Salt and pepper to taste

Place your chicken breasts on the grill, and allow to cook for about 15 minutes turning once, or until the juice from inside the chicken is clear.

Meanwhile place your chopped romaine in the bowl. Whisk the yogurt, olive oil, parmigiano, garlic, lemon, anchovies and pepper in a bowl until smooth. Add salt at the end and be the judge of how much you need.

Get your chicken slice it into strips. Toss the lettuce with the dressing and start plating.
Place the salad down first, then the chicken strips followed by the polenta croutons. If you choose, shave some parmigiano on at the end.

For the polenta croutons:
Follow the recipe on the box for one serving. Once ready pour onto something flat and lay out evenly about and inch thick. Allow to cool. Slice into cubes. Place a nonstick pan over medium flame and drizzle some olive oil place the cubed polenta and allow to get golden, flip and allow the other side to get golden continue with all sides. Set aside and then serve. Simple as that.

* Instead of Romaine you can use whatever you like. I used 3 different versions of radicchio

 

 

Healthy Eating New Years Resolutions – My Thoughts and Life

As I was surfing the net today and yesterday; I noticed how many posts were about losing the Holiday weight, getting back in shape, cleansing, dieting, detoxying; etc.

I started thinking about when was the last time that I have felt like that after the Holidays. I think that it’s maybe because I am so busy, hosting, prepping and running around that I really don’t actually gain weight during the Holidays. Don’t get me wrong I can’t wait to go back to eating healthier foods, eating at decent times, drinking a little less and staying at home a little more after the Holidays; but gross to the point of having to do a hardcore detox just hasn’t been on my to-do list.
But, I do know what it feels like and I do know what a nice detox does to the body. I’ve been there, done that and stressed about it just like everyone else. The thing that got me to writing this post is that once you start that detox/cleanse/diet you get back on track lose the weight and then reward yourself by going back to the same eating habits that brought you to do this in the first place. So, you go right back to square one.  Hence beginning a yo-yo effect. Then your body gets used to you doing this every so often that you don’t get the same results that you did the first time so you have to be a little more drastic each time and be more strict even while rewarding yourself.
So, I thought that I would give you some insight on how to get back on track and what I do to feel good again. It’s nothing crazy and it isn’t unachievable, you don’t have to sacrifice on the important foods and no you don’t have to blend everything.
You can eat and be thin too!

Often times too many we can’t wait to eat that piece of cake that’s in front of us. We can’t wait to have that huge plate of fries with that bigger than life burger. We think about eating that whole bag of chips (because we were good). Well I have news for you; I’m not saying that you can’t do that. I’m not saying that you’re a failure if you do that. And I am not even going to say that you’re an alien for even considering something like that. What I am going to say is that you need to reconsider if that’s what you really want to do? If that’s really what you’re body is craving? Is that something that is going to give you the energy to do something positive for yourself? Is it going to make you want to workout harder? Is it going to make you feel proud for making that decision? Is it going to give you the energy to go outside and play with your children for a bit? Is it going to give you the inner peace of mind that everything is going to be all right? Is it going to make that zipper on your favorite jeans go up? Is it going to make you feel light and healthy? Is it going to give you pure and utter satisfaction that when you are done you’ll want to get cozy with your husband, boyfriend or lover because you look and feel fine f@&king-tastic? If you don’t have one is it going to make you want to go out and find one?

Well if it doesn’t then why do it? Why even go there? I know sometimes we just really are craving it and one little piece won’t hurt; well that’s true one bite or piece won’t hurt. But do you have the willpower to say that’s enough! Do you have the will power to stop at that one piece or that one bite? Or are you going to excuse yourself every single time this situation presents itself? First; it’ll be because you were really good and ate really healthy so reward yourself. Then it’s because it’s the weekend. Then it’s going to be because it’s your friend’s birthday. Then it’s girl’s night. Then because it’s Easter, Memorial day, Summer Vacation, Independence Day, Winter, Christmas, NYE and there you have it a whole year of pure excuses that you seem to have no control over because you never told yourself that you don’t need that in order to be happy. It’s food! Not Eternal Salvation!

Ok, now those words were hard for me to say because I love food. I have and will always love food, and yes I’m going to saying it: Food Makes Me Happy!
But food makes me happy because my relationship with food is: eat to feel good, not eat to feel bad.
When I eat, it’s to have a positive effect on my body not the negative effect. I like to eat, indulge, know my limits and walk away. I’m not saying that you can’t eat that cake, or fries or whatever. I am saying that you shouldn’t look at it and say “that’s bad for me and I’m going to feel bloated in the morning” and then eat it anyways this way creating a negative effect with food because now you can only relate it to bad, and thus using it to punish yourself when you feel like you have gone too far. Instead of saying that is going to make me feel fantastic tomorrow and give you the energy you are lacking.  I eat and I know what is going to make me feel one way or the other. Say I don’t like Burgers, I’m not saying they aren’t good for you but they aren’t the best option either; so I’m not going out to eat one and I’m not going to eat it if it’s in front of me just because I am at a friend’s house or feel peer pressured. I don’t feel like I nourished my body and don’t like the after effects. I like pasta but I don’t eat it at every meal and I certainly don’t eat it when I feel like crap. I eat it when I feel good this way I look at it as a friend and not the enemy, this way I don’t have to eat it always. I know I can have it whenever I want; it’s a friendly food and I just don’t need it all the time.

What I know that I do need all the time is Vegetables, Fruits, Lean Proteins and Healthy fats and this is what consistently live off of. The rests are just fillers. I have lasagna, pasta, bread; I have cake, cookies, gelato; I don’t ever have sodas of any sort. I don’t have canned foods (besides beans and tuna). I don’t have white sugar in the house. I only cook with Olive oil. I try to eat only whole grain. I don’t eat processed foods if I can at all help it, so none of that is in the house.
I have formed healthy habits that I just will not touch certain foods, but because they literally disgust me. And for the rest I just eat them on occasion and when presented more often (like say the Holidays) I just eat a small portion and fill up on my veggies because I literally cannot live without them. That’s all. If you just cut back on the stuff that really doesn’t fill your heart, and just gives you a bloated belly. And start eating more whole; you can have miracles happen to your body.
Make your own salad dressing: 2 tbsp. Extra Virgin Olive oil, some fresh squeezed Lemon (or Vinegar I like Apple cider) some salt and pepper. That’s delicious and great for you and you’ll really enjoy it.

You’ll notice that your body won’t ever crave those foods anymore. And yes, you will be able to make all types of foods your friend and not cause you to feel so miserable after enjoying it.
Your New Years resolution should be about rediscovering yourself and changing your eating habits one step at a time. Food is good you just need to know when no is no. It’s obvious that if you are going to a party and you know you’ll have say a burger and fries, or pizza; well then start your day with fresh fruit, eat a nice salad with chicken or salmon for lunch and avoid eating crappy. You’ll fill up on good for you foods and won’t be starving for dinner and you’ll probably not even want to eat that dinner because your body is in ‘healthy mode’ all day it’ll know what it wants for dinner. Trust me. Your body is so freaking intelligent you don’t always have to over ride the cravings. If you feed it healthy it craves healthy.

As for drinking I know everyone says not to drink. I can’t do that! I like drinking and I’m married and my Husband likes to drink. What to do? Well, drinking isn’t bad you just have to watch what you drink. I love wine, I enjoy it and my Husband loves wine as well, so we drink wine. Not every night and not a bottle each time. We enjoy it, we can have it whenever and a glass isn’t going to damage anything. I don’t really drink anything else besides the occasional Skinnygirl Margarita or a Vodka Soda with 2 pieces of Lime squeezed in it. They are light and I still enjoy them if wine isn’t available.
I do like Mojitos, Caipirinha, Caipiroska, Pina Colada, Americano, Spritz, etc; but the thing with these drinks is that they are so sugary that you can really only drink one of them occasionally to not have negative effects on the body that I just opt out and prefer to stick to my glass of wine. Gives me more satisfaction. Period! I do give my body a break sometimes I tell my Husband that I am not going to drink for 2 weeks or something like that but it has to be an achievable goal and when drinking I try to limit 1-2 glasses a night. I’m not perfect I have those nights when I drink way too much, but it’s ok I am aware and I am having a good time. What is life without the occasional slip up. Just don’t regret it and punish yourself. It’s life move on. Make healthy choices and don’t put it off till tomorrow.

I can’t stand when people say. I feel like shit. I ate like shit, I need to start a diet or to eat healthy, but today I already started out unhealthy so I’ll do it tomorrow; oh wait after tomorrow because tomorrow I have to go out or blah, blah, blah. It’s an excuse! Just because you go out doesn’t mean you can’t make a healthy choice. So what if your friends are ordering crap. You’re paying for your food; eat what you want. Order a nice piece of salmon with roasted veggies and a glass of crisp white wine. Or do you really want that Burger with fries and a beer? If you do, go for it. You see I know how I would feel the minute I finished something like that and that’s gross! Unless I’m not making it at home with grass-fed meat, fresh veggies, a nice whole grain bun, some real cheese; then I don’t care for it. And especially not if I’m trying to be healthy.  You control your body and what goes in it. Healthy is so delicious. Start making small changes now and next year you won’t have to go on a diet after the Holidays. Yes You Can Do It!

Here’s a small list of my all-time favorites for a healthier lifestyle:

  • Drink a glass of water first thing in the morning
    (if you can squeeze 1/2 a lemon even better)
  • Eat fresh Fruit for breakfast (have an apple cut it into pieces and sprinkle cinnamon on it, or a nice fruit salad)
  • Serve yourself a ramekin of Almonds for a snack (or whatever nuts you like)
  • Eat a vegetable at every meal, and pick one night a week where it’s the star of the dish.
  • Don’t buy junk, you won’t eat junk.
  • Make healthy snacks and keep them around for when you get that hunger pang.
  • Don’t drink Sodas, and unless it’s completely 100% natural try to eat your fruit not drink it.
  • Eat a square of Dark pure Chocolate instead of dessert, and absolutely no Candy.
  • Make your own salad dressing, I don’t care if what you’re buying says low-fat, fat-free, all-natural, whatever make your own.
  • Avoid fried foods. Try roasted, baked, steamed, sautéed, grilled or boiled. Just top off with a drizzle of Extra Virgin Olive Oil, salt and pepper if it’s bland. It’ll be Delish!
  • Drink hot herbal or green teas throughout the day, and don’t put sugar. If you must a drizzle of honey, or brown sugar.
  • No artificial flavorings, foods, ingredients or drinks. If you can’t spell it out don’t ingest it.
  • Try to eat whole grains. Not wheat, whole-grain.
  • Incorporate more Lean proteins a.k.a Fish, Veal, Chicken, Turkey and some lean Red meat.
  • Eggs aren’t your enemy eating them at least once a week is good for you.
  • Eat Natural, Organic and try to stay away from anything in a box or can.
  • Drink wine instead of hard liquor, and if you drink hard liquor make sure it’s at least clear.
  • Keep it simple. Don’t over season or flavor your food. Leave out all those sauces. Stay all-natural, need some pizzaz use Extra Virgin olive oil.
  • Listen to your body, if you don’t like Soy or feel good when you drink it then don’t. Just because people say it’s better or good for you doesn’t mean you have to have it. I feel horrible and bloated when I drink Soy so I drink Lactose-free milk now and feel great.
  • Workout. You have to get off your butt and move that gorgeous body of yours. You have 24 hours in a day – 8 for sleeping = 16 hrs – 8 for work = 8 – 3 for meals = 5 -1 for working out still leaves you 3 hours. And if you don’t work that means taking out the 8 hrs for sleep, 3 hrs for meals = 13 hours left to work out. Do it! Find what you like and incorporate it in your long term lifestyle. Whether it be running, aerobics, yoga, pilates, kickboxing, rowing, cycling you need to find what you like and enjoy doing it because that the only way it’s going to last it you actually like the way it makes you feel.

I’m not a nutritionist or doctor. And please consult a specialist before stopping or starting anything new in your life. What I am is a girl that is 28 going on 29 and am in the best shape that I have ever been in my life after experimenting with all the possible, cleanses, detoxes, and trying a lot of different things I always went back to what I was trying to change. I finally figured it out. It’s a journey, a lifestyle and it doesn’t happen overnight but it does stay. And yes, you are going to look and feel much better forever.

Be healthy + eating healthy = Happy and Happy = Gorgeous body! Happy New Years.

Too Delicious to resist, Heavenly Coconut Balls; Gluten and Dairy-free

This is probably one of my favorite recipes that I will have posted to date. I do love all the other recipes; they are a part of my life and who I am and what I love to eat. With food, I generally think of things that go good together and make a dish that more often than not turns out to be amazing (That’s what my husband says). But this one recipe in particular, may it be because I don’t consider myself a baker or maybe because it didn’t take me one time but about 10 times at this point to get it perfect and somewhere that I felt good enough to publish (not that the other ten times they weren’t good I just wanted perfection), or whatever the case I love it and I’m proud of it!

I love coconut so although I must’ve eaten about 30 of these in the past 2 months, I’m glad because I actually lost weight and have a new found love for coconut and it’s healthy reputation.  Growing up here in Italy one of my favorite candy bars, were the famous Bounty bars made with shredded coconut and covered in chocolate. Yum. Then along came Ferrero chocolate company with it’s Raffaello chocolate with an almond in the center and covered with nothing but coconut itself.
Well, I stopped eating all these chocolates about maybe 8 years ago, occasionally indulging in one but don’t really have that love for them anymore because they are just too sweet and of course full of “other ingredients” that I can’t really even spell out.
All of these delicious products eventually become something I never craved or think of because they just aren’t part of the healthy woman that I am or became. I much rather indulge in things that are home-made and fresh. Don’t get me wrong occasionally a friend or someone will offer me one and I’m not saying I would never stick one of these in my mouth but I wouldn’t go out of my way to buy them, especially because now I have this recipe and the ingredients and flavor in these are so much more rewarding.

Also I am not saying that you are going to lose weight if you eat these. I love to work out and eat healthy foods and I guess that the combination of working out and the adding this healthy fat have really worked out for me and I couldn’t be happier.  It was a coincidence and a welcome at that.

Coconut has really been exploding over the world these past few years as a good for you fat, and how you should cook with it and use it as a fat substitution and try to incorporate it in your everyday diet (information we all knew just forgot about it). Just like nuts they are a healthy fat and you should eat them everyday. Be careful though that doesn’t give you a hall pass to go crazy, you still need moderation, after all that is the secret to being your best self ever! But do make them for New Years and serve them, your friend will go crazy. Or when you have a girls get together you can serve these as a little dessert this way you keep your waistline in check but your belly happy and indulged.

I should mention though the one that has really eaten about 100 of these is my husband, he loves them. Since I’ve know him and been married to him which is 9 years; he always eats a chocolate after dinner, but since these he will not buy chocolate and eats one of these every night and looks forward to them like a cute little puppy that he is, (in a mans body of course!) For him (seeing that he’s a chocolate lover ) I cover in dark chocolate, but I like to leave mine plain. So you choose how you want yours. If you want them plain just don’t dip them in the chocolate. I make this batch once a week and store it in a cookie tight container and they maintain wonderfully. Enjoy!

 

Ingredients:

Makes about 15 balls

2 cups of Coconut, shredded

1 cup of Almond flour*

2 Egg whites

4 tbsp. Honey

3 tbsp. Flax oil**

1 tsp. Vanilla extract

½ tsp. Salt

1 bar Dark chocolate

 

Preheat the over at 350°F (or 180°C).

Mix all ingredients besides chocolate in bowl. If you have an ice cream scoop use it, it will save you all the tedious work. If not (like myself) wet your hands and grab a spoonful of the mix and compact balls together patiently. (They will sometimes fall apart, just restart the ball, they are really light so this is bound to happen.)

They will turn out just takes time, don’t worry about them being too perfect.

Place balls one by one on the baking sheet or cookie tray and bake for 15 minutes, or until golden. Remove allowing to cool down.

If Chocolate coating them:
Get your chocolate bar and break into pieces, place in a ceramic or glass bowl and melt at Bagno Maria a.k.a Bains-Marie (which means to place in a small pot of water, over medium heat, place a smaller bowl or pot inside it and gently allow ingredient to melt); if not place bowl in microwave and melt about 2-3 minutes. Mix until smooth with a spoon and one by one dip the balls in, gently roll them around in the chocolate and then place on wax paper (or use the same baking paper you cooked them in). Allow to harden.
You can leave them at room temperature for about 2 hours, or place them in the fridge for half hour and they’re done.

*You can omit the almond flour and either replace with oat four or coconut flour itself**You can replace the Flax oil with coconut oil, or linseed oil, grape seed oil; I liked mine best with the flax oil.

Gluten-Free Crunchy Peanut Butter Nutella Cookies

A sweet treat for all mythineaters to make this holiday. You didn’t think that I would just expect no one to be craving something yummy and sweet, especially considering that there will be great temptation.

This is how it all started. We had dinner with a friend the other night and I really wanted to bring something. He wasn’t feeling good and I figured that if we brought a bottle of wine (which is our go-to, especially here in Italy, it’s always everyone’s favorite), he probably wouldn’t drink it.
He said that Pizza was on the menu and to not worry about bringing anything. I for one can’t bring myself to not bring something when going over to someone’s home. He’s been really nice to us, he often goes back to the States and every time brings us back something, like for instance hot sauce for my hubby, and organic peanut butter and for me; well let’s say I wanted the 50 Shades of Grey book series in English and couldn’t find them here in Italy so he brought them back from the USA.  Anything that we can’t find here in Italy he does the favor of getting them for us.

Well, it was cold outside I didn’t want to have to leave the house to go to the store (also cause I had no idea what I wanted to get). So I opened the cupboards, by this point I knew I wanted to make a dessert but not to heavy and also without flour considering that we were going to have plenty of it for dinner. I saw the Peanut and knew in that moment that it would be cookies. I also saw the Nutella and figured that seeing that they are pretty much the same consistency they should go good together, this was perfect. A power cookie with a little extra yummy goodness in there, afterall Nutella is made of hazelnuts and chocolate. They turned out fantastic and our friend really enjoyed them, my husband said that they tasted like a Reeses Peanut butter cup.
So, here is the super easy and delicious recipe. Now you can indulge this holiday without feeling too guilty. Enjoy!

Ingredients:Makes about 24 small cookies

1 cup smooth Peanut Butter (try to get the natural ones, no sugar or other additives)

1/2 cup Nutella*

3/4 cup Sugar

1 tsp. Baking Soda

1 Egg

1/4 cup Hazelnuts (finely chopped)**

1/4 cup Dark Chocolate (finely chopped)

Preheat the oven at 350°.
In a medium bowl mix sugar with baking soda, whisk in your egg and then add your peanut butter and nutella. Mix all ingredients. Stir in your chopped hazelnuts and chocolate. Prep 2 baking trays with parchment paper.
Get tbsp and scoop out dough; make balls and set on the trays.
Once you’re done with the balls grab a fork and make crosspatch patterns on each cookie.
Bake for 15 minutes, or until cookies are lightly browned. Let cool before eating.

* Nutella is optional you can follow the recipe the same way and just leave it out
** Hazelnuts that’s what I had but you can replace with any nut you want
*** You can also make larger cookies that is up to you, I did!

Healthy Side Dish Alternatives for Christmas

Christmas, Yet another holiday is among us and life is at its ultimate stress mode. There is so much to get done, so many things to decide and so little time to do it.
First of all I want to tell you the one secret, Breathe! No one is expecting you to perform the way you are expecting yourself to perform. You are your biggest judge, and Christmas is a time of Love, Forgiving and no Judging. So just breathe, it’s not like if you stress you are gonna get anything extra accomplished. It actually might just do the opposite.

I am one of those girls that like to occasionally spice up a Holiday Tradition; what I mean by this is sometimes I like to make roasted potatoes vs. mashed potatoes, or throw in a lasagna, or just make something different to add to the Turkey or Chicken and all the other standard side dishes that go along this festive late lunch/dinner.

Vegetables, yes I pretty much name this food group in every single one of my posts because I simply love them and can’t imagine my meals without them. So I have just a few simple and fast side dishes that will keep your dinner lighter but still delicious.

Lets start off with something I came up with that ended up being a success not to long ago when I had to bring something to a lunch. It can be served as an appetizer, finger food or main course if you’re going all vegetarian. Really simple.

Ricotta and Pesto Stuffed Artichoke Cap

Ricotta and Pesto Artichoke

Get your Artichoke cap*, scoop a 1/2 tbsp. of Pesto** and a dollop of Ricotta***, sprinkle some Pepper. Place in a baking tray drizzled with a little olive oil and  bake in the oven at 320° for 20 minutes.

*For the Artichoke: I found some frozen artichoke caps, I boiled them for 10 minutes and let them cool. You could try to do with fresh artichoke just remember to clean correctly and boil for approx. 20 minutes. You could also substitute with mushrooms caps.
**For the Pesto: I used a fresh store-bought version. I think in the USA you could probably find the Barilla version, if it’s to thick? Take it out if the container, put in a bowl add some olive oil mix until a little more creamy.
***For the Ricotta: Put the ricotta in a small bowl, add a drizzle of olive oil, some salt and 2 tbsp. of either Parmigiano or Pecorino. Incorporate all ingredients and that’s it.

Now for Side dishes I have a few delicious options:

Roasted Cauliflower

Roasted Cauliflower

Put your clean and chopped Cauliflower in a baking tray, drizzle with olive oil, sprinkle salt and pepper and bake at 350° for 20-30 minutes. It tastes so good you would’ve never thought that so little ingredients could make Cauliflower taste so darn good.

Roasted Cabbage with Pancetta

Roasted cabbage with Pancetta

Grab a head of cabbage and slice it in 4 or 8. Get out 4 or 8 big enough piece of aluminum foil to cover each piece of cabbage individually. Lay out 1 pc. of foil, place 1 slice of cabbage facing up, drizzle olive oil, sprinkle some salt and pepper, get about 1 tbsp. of diced pancetta and sprinkle on top. Cover the cabbage completely with the foil, to where no holes (like if you were to steam). Repeat the same steps with remaining cabbage. Place in the oven and bake at 380° for 25-30 minutes. Leave in foil so each person can open in their own plate.
Be careful when you open as steam may let out.

For the Beautiful Blogger Award, you are required to list seven interesting facts about yourself, so I’ll do all of that here before I list my nominees for each.

  1. My favorite meal has to be Spicy. And by spicy I mean HOT. I love, love, love spicy food. The spicier the better. I always have powdered Cayenne pepper at the table and put it in my plate before I eat.
  2. I prefer to cook than bake. I feel that with cooking you are constantly doing something you can see how it’s turning out and add stuff to it along the way; whereas with baking you have to wait to see how the final product comes out and there is not alot of action.
  3.  No matter what I have to eat popcorn while watching a movie. I love popcorn (homemade) and no matter how full I am or whatever, if I am going to watch a movie it needs to be accompanied by popcorn. I pop it with extra virgin olive oil, add sea salt and cayenne. Delicious.
  4. I love almonds. I eat a small ramekin of Almonds pretty much everyday. My favorite are the dry-roasted ones. Lightly salted or not slated (depends on the mood).
  5. My favorite exercise is Yoga or Pilates. I love Vinyasa, Ashtanga or Power Yoga; anything that will kick my ass while keeping my Chi in check. Perfect body toning exercises.
  6. Cleaning is my salvation. There is nothing better than a clean house. I feel like I can breathe and move on with my day when the house is completely clean and tidy. A bit OCD i would say.
  7. I love my husband. Seriously! I don’t know where I would be in life without him, he is the most amazing thing that has ever happened to me and I feel lucky to know that there is someone out there that has that much love, appreciation and most of all trust in me. Babe, I love you. Thank you for encouraging me to start a blog.
